Is it possible that God did not make everything but instead made a few things and let the rest develop from what he did make...?

Some people do believe that, and it makes more sense than to deny the scientific reality of evolution outright.

Such people tend to be referred to as "theistic evolutionists" and I think it is the official position of the Anglican Communion and the Catholic Church.

Even as i'm not religious but believe in God, i don't think man just appeared as we know him today or even 2,000 years ago. He appeared like Fred Flintstone. Seriously, it was the "cavemen" that we know of today.

No, it then turns into amino acids that over time glob together into a single-cell organism. And then through several billion more years of evolution, other forms of life form of which one becomes the human (that we know today; albeit through much evolution of its own) and one of those humans is born, has an excellence in music, and becomes Mozart.
